Bert ' s meatloaf

2 lbs. Hamburger
1 sleeve saltine crackers (crushed )
1 qt. Tomatoes (dip from the jar, save the juice )
2 eggs
1 med. Onion  (diced)
Mix by hand, shape into a loaf, put in a  pan. Pour 1/4 to 1/2 of the tomato juice in the  pan around the loaf. Top with ketsup. Bake at  4 25 *  covered  55 -60 min. Then uncover and brown the top.

Harvard beets

Bills grandmother 's  recipe 

3/4 C. Sugar
3 T. Butter
1/4 t. Salt
4 T. Cornstarch
1/3 C. Vinegar
1/3 C. Water
2 (15 oz.) Cans of beets (savings  1/3 C.  Of the juice )

Combine : sugar, cornstarch, vinegar , 1/3 C. beet juice  and boil,  cook 5 minutes .
Add: beets,  simmer.
Stir in : butter and salt.
